We only work using sourdough methods for all of our breads and pastries. The science of sourdough or naturally leavened bread is alchemy in motion. The sourdough starter is where the magic begins; it is caring for your digestive system that matters to us! Sourdough or naturally leavened bread is more easily digested than regular bread, and is also far more nutritious.
